Seitan Kebabs and Spinach Mashed Cauliflower (V)

Seitan Kebabs

  • 1 cup vital wheat gluten

  • 2 cups vegetable broth

  • 1/2 tsp salt

  • 1 tsp dried sage

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • 2 tbs soy sauce or coco aminos

  • 3 cups water

  • veggies of choice: bell peppers, cherry tomatoes, zucchini, broccoli, mushrooms, eggplant, etc.

  • 8 kebab skewers

Spinach Mashed Cauliflower

  • 1 bag frozen cauliflower rice

  • 1 tbs vegan butter

  • 1-2 tsp minced garlic

  • pinch of salt and pepper

  • 2 tbs almond milk

  • 3 cups of spinach

Serving Suggestions

  • green beans, broccoli, asparagus

  • side salad

  • sauces/dips: hummus, tahini lemon sauce, pesto, Bitchin' sauce, etc.



  1. To make seitan: Put the 3 cups of water and soy sauce in a medium saucepan and boil on medium high heat. Combine the vital wheat gluten and all the seasonings in a small bowl then add in the cup of vegetable stock til it forms a dough. Knead for a minute. Cut the seitan into small cubes and add to the boiling water. Boil for 1 hour or until the liquid has evaporated. Set aside.

  2. Assemble kebabs: chop your veggies into chunks and alternate the vegetables and seitan cubes on your skewer. Then brush kebabs lightly with oil or vinaigrette.

  3. Heat your grill to high heat and grill your kebabs for about 5 minutes, turn, and grill an extra 3-5 minutes until lightly charred.

Mashed Cauliflower

  1. Microwave your cauliflower rice according to the packaged directions (mine took about 5 minutes)

  2. Place the cooked cauliflower, butter, garlic, salt, pepper, and almond milk in a medium bowl and puree with an immersion blender until the consistency you like (you could also use a nutri-bullet or similar blender).

  3. Rip your spinach and microwave for about 30 seconds until wilted. Add it to your mashed cauliflower and stir. Serve immediately with kebabs!
