Calories 158

  • 1/2 cup pumpkin puree

  • 1 can chickpeas, drained and rinsed

  • 1/4 cup maple syrup

  • 1/4 cup cashew butter (or almond, pecan, or peanut butter)

  • 2 scoops of vanilla pea protein (I used Orgain Superfood)

  • 1/4 cup chocolate chips (I used Lily's 55% cacao)

  • 1 tsp vanilla extract

  • 1/4 tsp salt

  • 1/2 tsp baking soda

Suggested Toppings

  • 1-2 tbs melted dark chocolate

  • 1 tbs pumpkin seeds

  1. Preheat the oven to 350F. Line an 8x8 pan with parchment paper and spray with a nonstick spray.

  2. Put all ingredients (except chocolate chips) into a food processor and process until silky smooth. Stir in the chocolate chips and add to the 8x8 pan.

  3. Bake for 13-15 minutes until a toothpick comes out smooth.

  4. Let cool completely and add your melted dark chocolate and pumpkin seeds on top. Allow 30 minutes to harden and slice into 9 pieces- enjoy!
