Grain-Free Samoa Bars (V, GF, Paleo)

Samoas are without doubt the most decadent of all the GS cookies- how can you possibly veganize them?! These are little squares of chocolate, coconut, and buttery heaven!

Grain-Free Samoa Bars (V, GF, Paleo)

  • 3/4 cup blanched almond flour

  • 3 tbs butter substitute, melted (I went with Pure Blends Coconut Oil Spread)

  • pinch of salt

Coconut Filling

  • 1 1/2 cups finely shredded coconut

  • 3 tbs butter substitute

  • 1/4 cup erythritol or sweetener of choice

  • 1/4 cup coconut cream

  • 1/2 tsp vanilla extract

Chocolate Drizzle

  • 1/4 cup of chocolate chips (I used Lily's)

  • 1/2 tsp coconut oil


  1. Crust: Preheat your oven to 350F. In a medium bowl combine the crust ingredients until dough forms. Press the dough into a greased 8x8 pan and bake for about 15 minutes or until the edges are starting to brown. Let cool and turn off the oven.

  2. Coconut Filling: In a medium saucepan over medium heat, add the butter substitute and sugar and stir until just barely browned- about 5 minutes. Remove from heat and add in the coconut, coconut cream, and vanilla. Pour this over your almond flour crust.

  3. Chocolate Drizzle: Microwave the chocolate and coconut oil in 30 second intervals until runny and glossy. Drizzle this over your coconut filling and place into the fridge to set up. It should be ready to cut and devour in about 30 to 60 minutes.
