Baked Banana Oatmeal (V, GF)

While overnight oats will always be near and dear to my heart, sometimes you need something even easier! This baked banana oatmeal is the perfect meal prepped brekkie.

Baked Banana Oatmeal (V, GF)

  • 3 cups rolled oats

  • 3 scoops of protein powder (I used Orgain Vanilla Superfoods)

  • 2-3 medium ripe bananas mashed

  • 1 tsp cinnamon

  • 1 cup unsweetened almond milk

  • 2 tbs ground flax seed

  • 2-3 tbs sweetener of choice (I used Stevia mix)

Serving Suggestions

  • nut butters/spreads

  • fresh bananas

  • maple syrup

  • berries, peaches, pears, apples

  • seeds: pumpkin, chia, hemp, etc.

  • chocolate chips, cacao nibs

  • dairy free yogurt


  1. Preheat the oven to 360F and grease/line a 8x8 cake pan.

  2. Combine the ground flax, almond milk, and bananas in a large bowl and mix well. Add the oats, cinnamon, protein, and sweetener and mix just until combined.

  3. Add the oat mixture to the pan and bake in the oven for about 25 minutes.

  4. Let cool and cut into 6 slices and top it how you like it!
