Chickpea Flour Pancakes (V, GF)

What's that? Pancakes packed with protein, fiber, AND gluten free?! These pancakes are the perfect start to any day and taste delicious with any and all of your fave toppings!

When I was a little girl I turned my kitchen into a restaurant, printed menus, and served my parents brunch like I was running a high class establishment. Pancakes were always the most popular dish ordered and this recipe takes me right back to that!

Chickpea Flour Pancakes (V, GF)

  • cup chickpea/garbanzo bean flour

  • 1 scoop protein powder (I recommend vanilla Orgain)

  • 1 tsp baking powder

  • 1/2 tsp cinnamon

  • 1/3 to 1/2 cup of water (or almond milk)

Serving Suggestions

  • maple syrup

  • fresh fruit (strawberries, blueberries, bananas, etc.)

  • nut butters (peanut, almond, cashew, etc.)

  • chocolate chips


  1. Preheat griddle or pan on medium-low heat. (TIP: your pan is ready when you put a drop of water on and it sizzles)

  2. In a medium sized mixing bowl, combine all the ingredients until it creates a pancake batter consistency that you like. I personally like it a little more runny for larger pancakes.

  3. Spray the hot griddle/pan with nonstick spray. Scoop batter and place it on the griddle. can make anywhere between 4-5 medium sized pancakes or 2-3 large pancakes. Cook until bubbles form, flip, and do the same for the other side.

  4. Serve immediately with all of your favorite toppings!
